Job Summary:The Sr. Manager of International Quality Assurance is responsible for establishing and managing Food Safety and Quality Assurance programs for International markets, with initial focus on Mexico. This includes food safety programs, supplier quality management systems and regulatory program management. This individual provides technical assistance and guidance to supplier manufacturing plants and approves new suppliers in existing countries for primary supply, risk mitigation, cost reduction and quality improvement initiatives. This individual will establish, own and maintain the International product specification library, and harmonize all quality systems with existing domestic Panera Quality Systems to the extent possible.

Education, Experience, and Certifications:

  • A minimum of a Bachelor of Food Science degree or similar discipline; Masters preferred

  • 7+ years Quality Assurance experience in restaurant chain and/or food manufacturing environments

  • 2+ years of International experience

  • Fluency in Spanish is strongly preferred

Position Qualifications & Functional Skills:

  • Manages suppliers / vendors for International Markets, to ensure products and processes meet Panera Supplier Quality Expectations, product specification, food safety, Clean Food initiatives and Current Good Manufacturing Practice on a continuous basis

  • Monitors third party audit reports to ensure suppliers / products are in compliance to Panera Quality standards

  • Responsible for approving and maintaining up-to-date supplier quality documentation

  • Provides technical expertise and support to new product development, on projects designed to ensure food safety, improve food quality, optimize products/processes

  • Supports product evaluation program for compliance to specification as well as comprehensive review of new ingredients

  • Investigates and provides follow up with vendors and caf operations for foodborne illness, foreign material incidents

  • Establishes and manages specification performance systems for food ingredients, through sampling and monitoring programs, using modern statistical quality control methods

  • Supports approval of new and/or alternate suppliers of food products and food packaging with respect to food safety, quality attributes and product consistency

  • Supports compliance to regulatory requirements and internal policy for restaurant food safety programs

  • Provides technical expertise to caf operations on International Markets, for compliance to food safety regulations and best practices

  • Assists in serving as liaison to regulatory agencies

  • Must become a respected authority on Panera food ingredients, including a strong understanding and ownership of specification, sensory and performance aspects

  • Must demonstrate a balanced working knowledge of both food safety and quality assurance, for food ingredients and food operating environments

  • Travel up to 50%+, both domestic and international
